About this tour

What this tour is

Four hours of eating and walking, aimed at what Hungarians actually eat rather than what is served to visitors on Váci utca. It includes tastings along the way, so come hungry and plan a light breakfast.

Hungarian food is not only goulash, and goulash is not what most visitors think it is — gulyás is a soup, and the thick stew served abroad under that name is closer to pörkölt. Sorting that out is roughly the first twenty minutes.

What you’ll taste

The specifics shift with the season and with what is genuinely good on the day, but the shape is consistent:

  • Paprika, which arrived in Hungary in the 16th century and took two hundred years to become the thing the cuisine is built on. Sweet, hot, smoked — the differences are real and worth tasting side by side.
  • Lángos, deep-fried dough, properly with sour cream and grated cheese. The version at the Great Market Hall’s upper floor is the one tourists queue for; we’ll tell you honestly how it compares.
  • Sausage and cured meats, including téliszalámi, which is made in Szeged and Budapest with a mould rind that is entirely deliberate.
  • Somewhere to sit for a proper dishgulyás, halászlé if you like fish and heat, or paprikás csirke.
  • Something sweet. Kürtőskalács is the chimney cake you see turning on spits; somlói galuska is the one Hungarians order in a restaurant.

The Great Market Hall, honestly

The Nagycsarnok is worth seeing — the 1897 ironwork and the Zsolnay roof tiles are genuinely beautiful. The ground floor is a working market where locals buy vegetables and meat. The upper floor is mostly aimed at visitors, and the prices show it.

We take you through both and tell you which stalls the first floor is good for and which are a tax on not knowing better.

Practical notes

  • Tastings are included in the price. Full meals and alcohol beyond what is tasted are not.
  • Dietary needs. Tell us when you book. Vegetarian works with notice. Coeliac and severe allergies are harder in a cuisine built on bread and flour, but we can plan a route that works — we just need to know in advance, which is why this tour has a 48-hour minimum booking window.
  • Mondays. The Great Market Hall is closed on Sundays and has shorter hours on Mondays. Book another day if the market is the part you care about.
  • Pace. This is the least physically demanding tour we run. Around 3km, flat, with frequent stops.
